I love blueberries. And beets. And smoothies. When all three were jumbled up in the Vitamix, along with some other healthful pantry goods, this Blueberry Beet Smoothie made my soul sing!
I’m not gonna bore you with a story about how I stumbled across these beets in a raging hurricane or how the blueberries were sniffed out by my berry-sniffing hound. It’s a damn smoothie. Let’s just get on with it.
It was cold. It was yummy. It was good for my body. The color made me happy.
A reminder: beets make your constitution a funny color. You’re not bleeding to death, it’s just beets.

Beets. It seems like if you didn’t work with them growing up they get sidelined when you’re mature. That was the case with me. Silly! I love beets, and if you wrap and roast, they’re not even messy. Combined with blueberries and some nutrient boosters, this is a damn fine smoothie.
1 beet, roasted and roughly chopped
1 cup plant milk
1 ripe banana, frozen
1/2 cup blueberries, frozen
1 teaspoon maple syrup
2 tablespoons oat flakes
1 tablespoon flaxseed meal
Remember to add the liquid to the blender first, then the solid ingredients. This will give the blender something to work with when it starts chewing through those frozen chunks of banana and blueberries.
