This smoothie is sweet, chilly frosty, and very satisfying in any weather!
- 1 very ripe mango
- 1 C frozen cubed mango
- 1 C ice
- 1 C unsweetened nut milk of choice (almond works great)
- 2 T milled flax seeds
- 1 chunk (about pinkie tip size) ginger root
- 1 pitted date
Cut a chunk off the bottom of the ripe mango and squeeze the pulp into the blender.
Add the plant milk and then the rest of the ingredients to your Vitamix or blender.
Blend on medium high speed until it’s very smooth. Add additional plant milk to achieve your preferred smoothie thickness.
If you don’t have flax seeds chia or hemp seeds will work just as well. Hemp provides slightly more protein, but all three seeds work just fine.
If you’re out of frozen mango, frozen peaches and pineapple works really well here, too. Costco stocks an organic frozen mix of island fruit that is delicious in this mix.
Additional nutrition: add 1/2 cup of frozen cauliflower to the smoothie for one serving of cruciferous vegetable in a painless and easy way! You can barely taste the additional vegetable!
